Original Austrian Kaiserschmarrn

Kaisserschmarrn is one of the most famous main dishes or desserts from Austrian cuisine. With only 7 ingredients a heavenly delicious dish can be prepared. Best served with apple compote or stewed plums.

Ingredients

  • 3 eggs, seperated
  • 1 package vanilla sugar
  • 1/2 teaspoon cinnamon
  • 1 pinch of vanilla or tonka bean
  • 1 pinch of salt
  • 125 mL milk
  • 60 g flour
  • 2 Table spoons sugar
  • 2 Table spoons butter
  • 1 handful of raisins
  • 1 table spoon of powdered sugar for dusting
  • apple compote or stewed plums
  1. Separate the eggs. Beat the egg whites until stiff, sprinkling in 1 tablespoon of sugar.

  2. Whisk together the egg yolks, vanilla sugar, salt and milk. Stir in the flour.

  3. Carefully fold the beaten egg whites into the batter.

  4. Heat 1/2 tbsp butter in a non-stick pan. Pour the dough round from the edge inwards, leaving a small hole in the middle.

  5. Sprinkle raisins on top of the dough. Bake over low heat until golden brown. Add 2 tablespoons of butter to the hole and let it melt. Cut the pancakes into quarters, turn and bake on the other side until golden brown.

  6. Tear into pieces with the spatula. Sprinkle 1 tablespoon sugar on top and caramelize over medium-high heat, tossing.

  7. Divide the Kaiserschmarrn between plates and dust with icing sugar. Serve with apple compote and roasted flaked almonds or stewed plums.

  • It tastes even more delicious if you prepare the apple compote or stewed plums yourself.
  • For the apple compote, cut the apples into small cubes, heat them up in a pot with a bit of sugar and cinnamon until they are tender.
  • For the stewed plums, cut the plums into halves, heat them up with a bit of sugar, cinammon and vanilla until tender.
